Residence 'Pop Up'
Residence, Brighton’s first ‘pop-up restaurant’, is back at City College Brighton and Hove’s training restaurant, The Gallery, until 28th May. The restaurant will be celebrating the 70s - the decade when Britain fell in love with food - as part of the 2011 Brighton Fringe Festival.
'The 70s was probably the first decade when the UK really started trying to break away from bland stodgy food and being a little more adventurous' says Catering Tutor and Restaurant Manager, Chris Williams. 'For our menu, we’ve decided to do some modern twists on classic 70s dishes such as Prawn Cocktail, Scotch Egg, Chicken Kiev and Crepe Suzette. These dishes didn’t become hugely popular for no reason - it was because they were extremely tasty and they’re even more so when they’re freshly made by talented and inspired young chefs.'
Catering student and budding chef Emma Briant adds: 'These types of dishes were popular years before I was even born so it’s been a great learning experience to work on a menu like this and it’s also really satisfying to see how much the guests are loving the food.'

Catering Students at Residence
In-keeping with the theme, Residence will play host to artists who will create 70s-inspired work in the restaurant which will later be auctioned for charity. Menu prices are from £12.50 (three-course lunch) and £16.50 (three course dinner).
