Catering & Hospitality Apprenticeships in Brighton

 

The Hospitality industry is growing fast, with more opportunities than ever before to progress in an exciting, dynamic industry that’s full of flavour.


Duration: 18 Months

Start Date: Roll-On/Roll-Off

Course Content: You will learn, develop and practice the skills required to work in a hospitality environment which will include:

  • Cooking and finishing basic dishes, with one cooking style (boiling, steaming, grilling, baking and roasting)
  • Developing a range of cooking and presentation skills
  • Understanding how to combine dishes and cooking styles
  • Develop knowledge in food hygiene and food safety
  • Conforming to general health and safety in the workplace
  • Moving, handling and storing resources in the workplace

Assessment: Assessment will be through a range of assessment techniques including work place observations and the production of a portfolio of workplace evidence and knowledge.

Progression: Following successful completion of the Apprenticeship you may want to further develop your skills by enrolling onto a Level 3 qualification.

Entry Requirements: To do this course you are required to have one of the following 5 GCSEs grade A – E to include English and Maths or an equivalent level 1 qualification in the same vocational subject.

  • Developing a range of cooking and presentation skills
  • Understanding how to incorporate a number of dishes and cooking styles
  • Developing butchery and fishmonger skills
  • Conforming to general health and safety in the workplace
  • Moving, handling and storing resources in the workplace

Assessment: Assessment will be through a range of assessment techniques including work place observations and the production of a portfolio of workplace evidence and knowledge.

Progression: Following successful completion of the Apprenticeship you may want to further develop your skills by enrolling onto a Level 3 qualification.

  • Resource Management
  • Managing stock and stock levels
  • Cost control and budget management
  • Managing a team
  • Dealing with conflict and complaints
  • Conforming to general health and safety in the workplace
  • Moving, handling and storing resources in the workplace

Assessment: Assessment will be through a range of assessment techniques including work place observations and the production of a portfolio of workplace evidence and knowledge.

Progression: Following successful completion of the Apprenticeship you may want to further develop your skills by enrolling onto a Level 5 course.

  • Developing a range of complex cooking and presentation skills
  • Understanding how to incorporate a number of complex dishes and cooking styles
  • Developing butchery and fishmonger skills
  • Conforming to general health and safety in the workplace
  • Moving, handling and storing resources in the workplace

Assessment: Assessment will be through a range of assessment techniques including work place observations and the production of a portfolio of workplace evidence and knowledge.

Progression: Following successful completion of the Apprenticeship you may want to further develop your skills within the hospitality sector.

Entry Requirements: To do this course you are required to have one of the following 5 GCSEs grade A – E to include English and Maths or an equivalent level 2 qualification in the same vocational subject.
