Course aims:
Would you like to develop your technical cookery skill to an advanced level? Would you like to continue your training in a practical environment – where experience counts? This could be the course for you!
The NVQ Level 3 aims to build on your existing knowledge and skill, taking it to an advanced level so you will be able to confidently apply for supervisory positions or build on your menu portfolio.
You will already be working in the Catering industry, or have quite a bit of experience, but want to really develop your skills and gain a qualification that will allow you to and your menu to stand out from the crowd.

Our Catering department has excellent facilities, including professional kitchens with modern facilities. The Gallery – our very own restaurant is Brighton’s closely guarded secrets supervised by Chef proprietors that lecture on cooking programmes.

Tutors:
Our lecturers are very experienced teachers who have many years of industry experience in various catering establishments and business.
We also have guest speakers who come in to teach and in the past these have included chefs from local business and the world famous Gordon Ramsey.
Assessment: All formal assessment of practical skills and underpinning knowledge for this programme will be College based. This will take place throughout the course. Recorded work experience assists in achieving units.

Our Catering courses are progressive, so due to the specific skills needed in the catering industry you must complete our Level 1 and 2 courses before starting this Level 3 course.

Progression and links:
After successfully completing this course you can apply for the Foundation Degree in Culinary Arts at City College, or one of the many other Degree level programs around the country.
Alternatively, you will have the skills and confidence to progress onto a supervisory role in the workplace or develop your menu to include dishes with advanced cooking techniques.

Free Study and Financial Support
All full time courses are free to EU residents who are under 19 years old on the 31st August 2012. The only fees you have to pay are for specialist resources and equipment and the cost of these varies from £25 to £300 depending upon the subject you are studying.
Depending on your circumstances, you may be eligible for financial help from the college's learner support funds. You should apply for financial support as soon as you receive your offer letter.
