Course aims:
This food safety course will will provide a qualification for those working in the catering and food industry at supervisory level and above. It provides knowledge and understanding required for the production of safe food.
This intense course requires revision and preparation of information for each class.

Course content:
The course provides knowledge and understanding required for the production of safe food covering the following topics:
- Legislation
- Supervisory management
- Temperature control (chilling, cooking)
- Cleaning
- Contamination control
- Applying and monitoring good hygiene practises
- Implementing good food safety procedures
- Contributing to the safety training of others
Assessment: This course is assessed at the end of the final day by a multiple choice examination.

Entry Requirements:
It is recommended that anyone wishing to attend this course holds the Level 2 Award in Food Safety in Catering certificate.
