Budding Chef Caitlin Gets Her Big Break

City College Brighton and Hove Catering student Caitlin Slade (19) has secured a dream job as a trainee Chef at Raymond Blanc's showpiece restaurant, Le Manoir aux Quat Saisons. The famous Oxfordshire eatery opened in 1984, has achieved the highest awards and accolades of any restaurant in Great Britain and is regarded as one of the very best in Europe. Blanc is acknowledged as one of the finest chefs in the world.

Caitlin impressed the restaurant's Kitchen Manager during two-week's work experience which she'd won as the prize of an in-house College cookery competition. At the time of winning, Caitlin was a Level 2 student competing against Level 3.

Caroline Riley, City College's Programme Area Leader in Catering & Hospitality, says:

'Caitlin is a very dedicated, very capable young student. She puts 100% into everything she does and this has been proven by her success in being offered a job at such a prestigious restaurant.'

Caitlin says:

'It's very daunting to work at such a well-known restaurant but being at City College has given me the confidence and skills to take on this kind of opportunity. I'm sure working at Le Manoir will give me the experience I need to progress in the future. It'll be great fun too, especially working for such a renowned chef as Raymond Blanc. When I've met him he's been very kind and seems keen to give young people an opportunity. He's got a lot of 18 and 19-year-olds working in his kitchen and it's a very friendly atmosphere. I've made good friends from being on work experience there so I don't think I'll have any problems settling in when I move to Oxford in the Summer.'
