Catering students compete for Toque d'Or

Budding Jamie Olivers from City College Brighton and Hove have made it to the regional finals of The Nestlé Toque d'Or, the UK's premier student catering competition. From an original entry of more than 60 colleges, City College was chosen as one of 12 teams who will compete to fill just one of only four places in the Grand Final. To win their place, the final year catering students created a three course, £8 per head lunchtime menu concept which considered current and emerging trends for healthy and nutritious dishes. They will now be facing a tough line-up of esteemed industry professionals as they go through their paces at the College's training restaurant, The Gallery, on Tuesday 6th March.

Now in its 19th year, The Nestlé Toque d'Or is the ultimate challenge for catering students. In a unique opportunity, students have the chance to demonstrate their skills by creating their own 'place to eat'. Not only will they be challenged to create an original concept but, if successful, they will see their 'place to eat' come alive by running it as a commercial proposition at a dynamic new venue for the grand finals.

City College's successful team of students consists of four cooks ? Paul Whapplington, Scott Roxburgh, Claire Edwards, Amy Maynard and two front-of-house staff ? Glenda Bull and Will Stevens led by tutor Rob Silverstone. Together they must work as a team to turn their unique concept into reality as they serve 30 guests. Although in familiar surroundings, the students will have to stand the heat or get out of the kitchen as they face the pressure and watchful eye of the experienced judging panel.

City College will be presenting their 'Sussex Woodland' menu reflecting the value of local produce that grows in the wild. The students will have just three hours to prepare and serve 30 people their chosen menu. City College's lunch which will consist of game and wild mushroom consommé with pigeon parcels as a starter, whilst the main course of Paupiette of trout with a lemon & lime sauce presents the perfect platform for the college to launch its signature dish to persuade the palates of the judges that they are the better team. The dessert will be a sharing plate of choux rings filled with apple compote, served on a red plum sauce, Medlar fruit ice cream with caramel surprise.

The four Grand Finalist Teams will be announced on 9th March 2007 and will go on to compete for a coveted place on the study tour of a lifetime to the internationally acclaimed Johnson & Wales University in North Carolina, USA. In addition, the winning team's college and each of the three runners up will receive catering equipment for their college too.
