Star Chef Returns to Judge Sussex's Young Catering Talent

One of the brightest stars of Britain's culinary scene has returned to the College where he first honed his skills to judge a competition featuring Sussex's budding chefs. Armand Sablon, who studied at City College Brighton and Hove, recently won the Roux Scholarship, widely respected as the most prestigious competition in the UK for young chefs aged 22 to 30.

Now based at London, Armand was back in his hometown to judge the Pan Sussex Cook and Serve 2007 competition which tested the kitchen and front-of-house skills of students from local catering colleges. This year's theme was 'A Taste of Sussex' and the menu featured local ingredients such as Southdown lamb, mackerel, samphire, Golden Cross cheese as well as wines from Hassocks, Ditchling and Cuckmere. Armand was judging alongside Neil Hancock, Catering Manager of the Royal Norfolk Hotel in Bognor Regis and the winning team was Tim Bacon and Nick Halsey from Northbrook College in Worthing. The event was organised by the Sussex Hospitality Centre of Vocational Excellence (CoVE) in Catering and Hospitality.

Armand Sablon says:

'The standard of cooking ability was very good. The students were very clean and well-presented and they worked in an organised fashion. It was definitely good enough to serve in any quality restaurant.'

'I always keep in contact with City College because it is where I started and they gave me a lot of support when I left and helped to get me established in London so this is my way of giving something back. I also think it's good for the students to meet former students who have got established in the industry so they can gain insight into where they can go in their careers if they put their mind to it.'
