Catering students from City College Brighton and Hove have been put through their paces recently in the busy kitchens of Brighton’s Hotel du Vin in preparation for an event that the College is hosting at their training restaurant, The Gallery, as part of this year’s Brighton & Hove Food and Drink Festival. The Tribute Dinner for Hotel du Vin on September the 18th is in honour of the College’s long-standing relationship with Hotel du Vin’s Head Chef Rob Carr who has been mentoring City College students in the workplace for the last seven years. Mr. Carr has also offered employment to the students who have impressed him most during this time. The menu on the evening will celebrate Sussex cuisine and feature exclusively local produce.

"It’s fantastic from a chef’s point of view to have students in my kitchen who have a sufficiently solid basis of skills that they know exactly what’s required from them and can think on their feet. The relationship with City College works really well as it helps us to source a consistently high quality of employee and it’s also a nice way of putting something back into the community by encouraging the next generation of local chefs."
