City College’s Rob releases his Brighton ‘Mule’

Rob Silverstone, a Lecturer and Hospitality Manager at City College Brighton and Hove, is the author of a newly-released book ‘A Mule in Brighton’ - a quirky, affectionate memoir inspired by his rambles around his beloved Brighton and the beautiful Sussex Downs. The book follows on the successful heels of Rob’s ‘A Mule in Rouen’ which looked at his experiences of French life while he was running a restaurant in Normandy.

‘A Mule in Brighton’ is not only a delightful observation of the local countryside and Brighton itself, but is also an exploration of the bars, cafés and restaurants of the region. It also includes over two dozen of Rob’s own recipes.

Rob Silverstone spent many years cooking in Oxford, Copenhagen and Nice. A keen interest in healthy eating led to collaboration with the eminent French chef Michel Guérard, author of 'Cuisine Minceur'. In 1994 he opened The Cook and Fiddle on Brighton seafront, using locally caught fish, Sussex cheeses and Cuckmere Valley wine. The abundance of Normandy markets tempted him to try a restaurant in Rouen. The gothic architecture of Rouen’s old quarter also inspired a passion for black and white photography and Rob’s pictures have been exhibited in Brighton and at 'Photofolies' in the Loire.

But why did Rob return to Brighton after experiencing the idyllic rural French lifestyle that so many people aspire to these days?:

"There are surreal features of French life that exist nowhere else, and it’s always a pleasure to encounter these when I return but ultimately, I returned from Normandy because it lacked the vibrancy and warmth of Brighton."

Michael Buckman, City College’s Programme Area Leader in Business and Hospitality says:

"Rob’s enthusiasm for Sussex cuisine has been very influential at the College and our budding chefs get a lot of inspiration from him. It’s great to see all his local recipes and stories brought together in such an engaging book."
